Product Notes
The Golden Slopes is named after the deep yellow coloured granite rocks found in this vineyard (planted in 1966). The soils are of course granite with a 15% clay component. The results in grapes that ripen slightly later than the vineyards on the farm and the wine always has plenty of texture and tension on the palate; wonderfully balanced acidity and length too. The aromas are dominated by yellow fruits, quince and spicy notes.
Grapes: Chenin Blanc 100%
Vinification: The vinification is quite straight forward when you are working with fantastic grapes from old vineyards. The total vineyard yields around 2 tons/ha. The grapes are pressed and run off into older casks for fermentation and ageing. Maturation: We only use old 1200L foudres for the fermentation and maturation of 15 months. After this the wine is are racked and bottled.
