Winemaking process:
Fermentation:
In stainless steel tanks. 10 days of alcoholic fermentation with temperatures between 24º and 28º C, lowering towards the end of the process.
Total skin/wine contact time: 10 days.
Ageing process:
30% of the wine is aged in French oak barrels (one to three years old). The remaining wine is aged in stainless steel tanks.
The malolactic fermentation spontaneously formed during its ageing in the barrels or stainless steel tanks.
Filtration Procedure:
Wine unfiltered and with natural tartaric stability. It may present fine decanting.
Tasting notes:
The Carménère 4.090 from the 2020 harvest has a deep ruby-red colour with dark violet shades.
To the nose it is exuberant, combining black and red fruits that compliment the black pepper, sweet green pepper and slightly toasted notes.
It presents a rich structure, very well accompanied by its fruity and spicy flavour, creating an intense persistence within the mouth.
Ideal temperature for consumption: 18 to 19ºC

Ideal to have with chicken, turkey, grilled pork and pasta.
