Cream – Cream sherry is produced by blending Dry Oloroso with Pedro Ximenez to a blend ratio of about 60/40. The Pedro Ximenez adds a raisiny characteristic to the nuttiness of the Dry Oloroso resulting in a very special dessert sherry. The Atlantic influence and Sanlucar’s unique microclimate combine to increase the acidity, which helps carry the flavor through the finish. Appellation: Jerez, Xeres, Sherry Composition: Palomino and Pedro Ximenez Soil: Albariza – 85% limestone; balance sand, and clay Aging: Approximately 18 years in the Solera system Barrel: American white oak, 600 liter size Alcohol: 17.5% pH: 3.34 Description: Mahogany color, candied peach aroma; velvety smooth, raisiny sweet flavor similar to figs, soft yet full body; long, creamy textured finish When to serve: As a dessert wine or with coffee How to serve: Room temperature, slightly chilled, or with ice Appropriate foods: Sweet desserts, cream pastries, coffee, soft, mature cheeses Store after opening: Tightly corked will keep almost indefinitely with or without refrigeration
