TASTING NOTES
Visual aspect: Deep, cherry red with raspberry border. Clean and bright.
Nose: Intense, blackberry and fruits of the forest (blackcurrant, raspberry) aromas. Floral notes (violet). Cedarwood. Pleasing notes of spice (black peppercorn, ground white pepper) with balsamic hints.
Palate: Lively entry, fresh. Juicy, fruits of the forest flavours. Intense balsamic notes with hints of nutmeg and vanilla. Subtle notes of pepper (ground white and Jamaican). Wild herbs. Polished tannins. Atlantic freshness. Long and intense.
PAIRING
Red tuna. Flamencan-style eggs. Marinated dogfish. Partridge stew. Duck paté and duck terrine. Fusion cuisine (Atlantic, Japanese, Mediterranean).

Origin of grapes: Our Finca A Viñoa and Cabildo vineyards, the latter being in the county of Cabanelas, famous in Ribeiro for its red wines. The vines are 15 years old.
Soil types: A range of soil types. Granite sand and slate schist.
Varieties: Caiño Longo (34%), Sousón (33%), Brancellao (33%)
Vinification: Picked by hand with the utmost care, using small crates. The clusters are kept in a temperature controlled chamber at 5ºC for 12 hours. They are then sorted manually on a vibrating selection table and destemmed. Cold maceration in stainless steel vats for 12 days followed by alcoholic fermentation in 500l. barrels. Racked into FrencH oak barrels for malolactic fermentation and then aged in barrel for 6 months. Bottled and aged for a further 3 months.
