Vinification: Strict and thorough selection of the grapes in the vineyard. Manual harvest in 15 kg boxes. Temperature controlled processing of the grapes at 5º. Manual selection at the sorting table. Soft destemming and pressing in inert atmosphere. Static racking of must for 24 hours and separate fermentation of each variety in 30 hl stainless steel tank at 15º. Elaboration: 100% of the wine in new French fine oak barrels of 500 l for 8 months on fine lees applying the bâttonage technique.
Bottling: Fining with isinglass. Open filtration for shine purposes. Bottling without tartaric stabilisation.
Profile of the wine: Strict selection of the best Godello of old stocks.
Tasting note: Vintage with a high aromatic potential. Its aroma includes floral and fruity notes with together delicate mineral nuances provided by the local ground character. The palate is fresh and creamy with a soft, silky and lingering tasting finish.
