Blend: 85%Cabernet Sauvignon, remainder merlot, malbec and carmenere
Origin: Central Valley.
VINEYARD
Caperana and San Jorge Vineyards, standard planted vines; drip and flood irrigation with controlled deficit; careful viticultural management aiming for proper ripeness of the tannins and avoiding green flavours.
FERMENTATION NOTES
Fermented for 8 days at controlled temperatures (25-28 °C); selected yeasts; 3 to 4 pump overs per day; 2 to 7 days of maceration after fermentation; complete malolactic fermentation.
FILTRATION
Filtration through a 0,65μ membrane. Cold stabilized
