All of our wines at Pheasant’s Tears are fermented and aged in qvevri a unique Georgian vessel used to ferment and store wine.
In accordance with Georgian traditional winemaking methods, the ripest of stems are added to the grape skins, juice and pits, for both our reds and our whites.
Since all of our wines are aged exclusively in qvevri no flavors are imparted from oak barrels. What some might consider a lack of oak we view as an opportunity to let the quality of the grapes and the resulting wine shine through.
Usually around 3 months on skins and the most typical traditional style in Kakheti.
Deep golden amber. Intense and very complex nose spanning dried orange fruits, bees wax, fragrant spices, marmalade, sweet chipotle chilli. Very complete aroma.
Medium but strong orange fruit accent with lots of fine raspy tannins creeping in early to restrict the otherwise rich texture. Tannins fall away to leave lots of flavours of earthy minerality, dried orange rind, peach skin and mead. This could really pair well with roasted meats.
