Product Notes
Unison Vineyard is a small Family Estate in the heart of the Gimblett Gravels Winegrowing District in Hawkes Bay. Established in 1993, with densely planted vines that are carefully managed for low yield, ripeness and intense flavour. Our red wines are made from 100% Gimblett Gravels fruit grown in our own vineyard.
Our philosophy of attention to detail includes handpicking, gentle basket pressing and top quality oak barrels to ensure the wines developed from our unique terrior and capture the intensity the vineyard has to offer. In keeping with this philosophy of attention to detail, we installed our own bottling line in 2012. Jenny Dobson's winemaking expertise from Bordeaux, Australia and New Zealand, ensures our wines are naturally in balance and can be enjoyed when young or after many years of careful cellaring.
This is our ultimate blend and is only made if the vintage is good enough. Made to showcase the “King of Grapes”, Cabernet Sauvignon, this wine is crafted from grapes grown in the best parts of our vineyard and with the lowest number of grapes per vine. 2015 was a cooler spring and early summer than usual but by mid-summer the heat that Cabernet needs really kicked in. Bold, fragrant aromatics of sweet blackcurrants, crushed dried herbs layered with tobacco, cedar and cinnamon bark. On the palate there is sustained flavours of cassis, dark berries, spice, cocoa and graphite. Well knit, lacy tannins dance on the finish that will soften further with careful cellaring. Decant before serving.
