The Latin phrase “inconcessum persequor” surrounding The Grail on our emblem translates into “I pursue the unattainable”. Between the varied slopes of the beautiful Stellenbosch valley in South Africa, the Borman family pursue the unattainable to 'perfect' the art of winemaking.
Grapes grown on decomposed granite soils.
Grenache 67% and Syrah 37%. Both components were whole bunch fermented and left on the skins for 10-12 days. The Syrah was aged in older French oak while the Grenache was kept un-oaked in concrete. Blended after 8 months and prepped for bottling.
Tasting notes
Perfumed aromatics. Elegant with a backbone of structure. Great focus.
